SIHALACT Oeno is a direct inoculation malolactic bacterium of German extraction that is simple and fast to use. With strong tolerance for acidity and alcohol, and no histamine or diacetyl production, it is a clean and reliable way to initiate malolactic fermentation in your wine.
Always store in the freezer and allow the packet to come to room temperature slowly before use. No acclimatisation required: simply rehydrate in chlorine-free water at 20 C, then adjust temperature slowly to within 5 °C of the wine temperature. After 10 minutes you’re ready to go.
Note that pack sizes are very specific, and that under-dosing will most likely result in a slow start to fermentation.
