Fermentation
Fermentation is the heart of brewing — where wort becomes beer. After cooling, the sweet, hopped wort is transferred into fermentation vessels and inoculated with yeast. Yeast consumes sugars, producing alcohol, CO₂, and a range of flavour and aroma compounds.
Typically carried out in stainless steel, temperature-controlled conical fermenters, this stage requires tight control of temperature, pressure, and timing to ensure yeast health and consistent flavour.
